Healthy Green Fritters
Ingredients
2 carrots, grated
2 zucchini, grated
1 cup shelled edamame beans
1 cup chickpea flour (or normal flour)
2 eggs, whisked together
pinch of cumin, chilli, turmeric and paprika
salt and pepper to taste
Method
Combine grated carrot, zucchini and edamame beans in a bowl and stir with a fork until well mixed well.
Add flour to the mixture, and stir well again until the flour coats the vegetables well and they are well combined. Finally, add the whisked eggs to the bowl, and spices. Mix again.
Heat a flat fry pan on medium heat, and add a dash of oil to the pan. Place spoonfuls of the mixture into the pan, and cook until brown, (about 2-3 minutes), before flipping the fritters and cooking through. The thicker you make the fritters, the longer they will take to cook. Lower the heat if your fritters are thick, and cook low and slow.
Eat while warm, or make in bulk and store in an airtight container in the fridge for up to 4 days after cooking.
