Chewy Chocolate Chip Cookies
Method
1. Preheat oven to 180 degrees celsius and line a flat baking tray with baking paper.
2. In a large mixing bowl, combine the two sugars and butter. Using a hand mixer or blender, beat the mixture until light and fluffy. This will usually be about 4-5 minutes.
3. Add egg and vanilla and blend again.
4. In another bowl, combine flour, chocolate chips and baking soda. Stir with a spoon to coat the chocolate chips in flour, then add to the wet mixture/butter sugar.
5. Using the mixer, blend dry ingredients into wet and mix until a cookie dough forms. Next, using a spoon, scoop spoonfuls of the cookies mixture onto baking tray.
6. Bake cookies for 10-12 minutes until just going golden. Remove when they begin to go golden, and then leave them to cool on the tray. This will ensure you get soft, chewy cookies and they won’t be super hard!
7. Store in an airtight container.

3/4 cup white sugar
3/4 cup brown sugar, packed
1 cup butter, softened slightly
1 teaspoon vanilla essence
1 egg
2 1/2 cups flour
1 teaspoon baking soda
2 cups chocolate chips
