Apricot and Coconut Bliss Balls
Method
Using a food processor, blend and pulse the apricots until they are finely and coarsely chopped into a paste. You can add a dash of water to help this process.
Once finely chopped, add coconut, cashews, almonds, orange juice and orange zest and combine for 1-2 minutes until well combined. Add the coconut oil and pulse again.
If the mixture comes up too dry and crumbly, add small drops of orange juice until it comes together. If the mixture is to wet, add more coconut until it comes together.
Using any leftover coconut, place into a small rounded dish and roll balls into coconut to coat. Place each ball into a lined tray and place tray in freezer to set until firm.
Keep stored in an airtight container in the fridge

2 cups (300grams) organic dried apricots
2 cups (160grams) organic desiccated coconut
1/2 cup raw cashews
1/2 cup raw almonds
2 tablespoons of orange juice
zest of an orange (optional)
2 tablespoons of coconut oil
1/4 cup extra desiccated coconut (for rolling)
