Vanilla Protein Cake

Vanilla Protein Cake

Method:

  1. In a medium sized bowl, mix baking powder add protein powder to combine well. Once mixed well, add in your liquid egg whites, almond milk and vanilla, and stir again. Be sure to remove any lumps that will be created by the protein powder, you can use a fork or whisk to eliminate these!

  2. Select your serving dish, and pour the mixture into here. If using a coffee cup, you might need to split the mixture into two! I used a medium sized ramekin and it worked perfectly!

  3. Place in microwave for 1 - 1/2 minutes, then continue cooking in 45 second intervals until light and fluffy. You will need to stop the microwave and stir in intervals to prevent overflowing.

  4. Once cooked, remove and top with your bits and bobs and enjoy warm! I topped mine with white chocolate and freeze dried raspberries by Fresh As.

Ingredients:

  • 160ml egg whites

  • 120 ml almond milk, or any milk of choice

  • 60 grams of protein powder, I used
    Two Islands Co Vanilla and Coconut

  • 1 tsp vanilla essence

  • 1 tsp baking powder

  • ​Toppings: White chocolate, or regular chocolate chips, nuts and seeds, freeze dried fruit or berries, and any other bits you might want to add! Either add on top when cooking, or add after and use as topping.

Note: if you just want to have this for one person, simply divide the mixture in half!
