Peanut Butter, Chocolate & Banana Bread
Method
1. Preheat oven to 180 degrees C and line a loaf pan with baking
paper.
2. Place egg and banana in a bowl and mix well. Add all remaining
ingredients through almond milk and mix until well incorporated.
Finally, add the almond meal, gluten free flour and oats. Stir.
3. Pour mixture into your loaf pan. Arrange chocolate chunks on top
of bread.
4. Bake for 1 hour or until the bread is firm and golden on top. It may
have a few cracks, but to ensure it is cooked through use a skewer.
Remove from oven to cool. Enjoy as is, or when toasted in slices.
Ingredients
• 1 flax egg (regular egg if not vegan)
• 3 medium ripe bananas, mashed
• 1/2 tsp pure vanilla extract
• 3 1/2 tbsp melted coconut oil
• 1/4 cup packed brown sugar
• 1/4 cup coconut sugar (or use more brown sugar)
• 3 tbsp maple syrup
• 1/2 cup crunchy or smooth peanut butter
• 3 tsp baking powder
• 2/3 cup almond or other milk
• 1 1/4 cup ground almond meal
• 1 1/4 cup gluten-free flour
• 1 1/4 cup oats
• 6-8 large squares of good quality vegan dark chocolate
